Mutton Steam Roast Raan

Ingredients
  • 1 mutton leg
  • 3tbsp ginger,garlic paste
  • ½ bunch fresh coriander
  • 4tbsp papaya paste
  • 250g yogurt
  • 1tbsp garam masala powder
  • 1tbsp cumin powder
  • 1tbsp chat masala
  • 1tbsp khatai powder
  • 1tbsp crushed cumin seeds
  • 1tbsp tumeric powder
  • 2tbsp red chili powder
  • 1tbsp red chili flakes
  • salt to taste
  • oil for fry
Instructions
  1. Open joint of mutton leg from center and cut off bone so fry easily. Also remove excess fats. Kante sy iss ko godh leen.
  2. Place in baking dish apply salt, 2tbsp ginger garlic paste, 2tbsp papaya paste, one be one on each side of mutton leg.
  3. Heat up oil in karahi .Mutton k iss piece ko skewer k oper rakh k iss ko oil wali karahi k oper rakh k cooking spoon ki help sy hot oil mutton leg par dalen.
  4. K meat ka color change hojae.ok na? then change side and do this on other side. Flame should be on while doing this. Phir skewer ko karahi k ander rakh deen koch der.
  5. [pahle oper sy oil iss ley dala hai k meat k ander jo pani hai wo burn hojae] now again turn side and keep it again in karahi with skewer till color change in brown. Roast wala color hojae.
  6. Take a separate bowl beat yogurt in it. Add 2tbsp papaya paste, 1tbsp ginger garlic paste, and mix it then add salt, chili powder, red chili flakes, haldi, garam masala powder, zeera powder, khatai powder, ½ tbsp chat masala, crush zeera, mix all. Add frsh coriander and mix.
  7. Apply this batter on leg both sides. Place raan in steamer. Keep it atleast in steamer till tender.
  8. Take out raan from steamer with help of 2 slicers.
  9. Garnish with cucumber, salad leaves and lemon.
