Low Carb Stew Recipes

Having low carb food does not mean that you have to eat tasteless food. In fact, you can make delicious low carb meals which you and your family can enjoy. Here are two low carb stew recipes to get you started.

Beef Stew with Vegetables

Ingredients:

  • 2 pounds lean stew beef
  • 1 cup chopped onions
  • ½ teaspoon seasoned salt
  • 2 to 3 teaspoon vegetable oil
  • 1 can (10 ½ oz) condensed beef broth
  • Hot water
  • 2 cups diced carrots
  • 1 stalk celery cut into ½ inch pieces
  • 2 table spoon flour
  • 1/3 cup cold water
  • Black pepper and seasoned salt to taste

Method:

Rinse the beef in running water. Heat oil in a Dutch oven, add beef, seasoned salt and chopped onions. Cook over medium heat for 10 to 15 minutes, until the meat gets brown on all sides and onions become tender. Drain off excess oil. Add beef broth and hot water to the pot until the liquid is one inch above the beef. Cover and cook over low heat for 11/2 to 2 hour or until the meat is tender. Mix the flour with 1/3 cup of cold water and make a smooth paste. Add this mixture to the pot slowly to make the stew as thick as desired. Add pepper and salt for seasoning. The stew is ready. This serves 8.

Beef Stew

Ingredients:

  • 2 ½ pounds beef chuck roast cut into chunks
  • 12 oz whole white mushrooms
  • 3-4 ribs of celery
  • 2-4 medium carrots
  • 1 bag frozen baby onions (12-16 oz)
  • Peanut oil
  • Bay leaves, basil, and thyme to taste
  • 2 tbsp beef soup base
  • Water
