One week for Halloween and I’m sure you have everything planned to sweeten your kids and all the neighborhood who come to ask you for candy.
But for the grand finale after your children become exhausted and radiant running through the streets in search of candy, prepare this rich and easy pumpkin cake to share with the whole family.
- 1 cup oil
- 3 eggs
- 500g pumpkin puree
- 1 teaspoon vanilla extract or essence
- 2 and 1 / 2 cups sugar
- 2 and 1 / 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon nutmeg
- 1 teaspoon ground allspice
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cloves
- 1 pinch of salt
- 1 / 2 cup chopped walnuts
Preheat oven and grease a griddle or greased (or mold) tubular.
Beat eggs with a fork and then mix them with oil.
Add also the pumpkin puree and vanilla essence and beat everything until it forms a creamy mixture.
Sift through a sieve all the other ingredients (except walnuts), mix and add to the cream before without stirring too much.
Add the chopped nuts.
Bake in tube pan until the batter is cooked (if you click with a knife that will come out clean). Take about 1 hour.
When done, let cool a few minutes and then demould to cool completely. Sprinkle with powdered sugar or icing.
Or, if you prefer and you with inspiration, decorate it to look like a real pumpkin. You can use colored icing or cream kitchen dyed orange (green and brown stems and leaves).
